I wanted to also...Great information Joanne, thanks. I wanted to also mention that 'soaked' nuts are sometimes referred to as 'sprouted'. My Whole foods store has started carrying some 'sprouted' nuts, almonds and pumpkin seeds in particular (in the raw foods aisle).
